Pete’s Place at Grand Hyatt Singapore Food Review

If you recall my post a few weeks back, Pete’s Place, the Italian restaurant at Grand Hyatt Singapore, recently introduced a new chef – Cataldo Chiloiro. He brings with him a new menu showcasing influences from Puglia where he hails from. I recently visited Pete’s Place as I had heard so many good things about the restaurant. The F&B offerings at Grand Hyatt Singapore never disappointed before so it was only a logical step to check out their Italian restaurant.

Entering the restaurant for the first time, I get the feeling of a homey trattoria which is in contrast to the other more luxurious venues of the hotel. Pete’s Place has an open kitchen where one can see the staff hard at work preparing various styles of pizza and pasta. There’s also a bread station and salad bar which guests at Pete’s Place can partake of.

We started off with a plate of Parmigiana di Melanzane ($22), an option that also suits vegetarians. The varying textures essentially complimented each other in this dish with the chewy mozzarella and parmesan contrasting against the slippery slices of eggplant. Make sure to soak it with the underlying tomato sauce for a more robust flavor.

I love how the beef sauce melded with the cheese for the Lasagna Tradizionale ($28) that came next, a dish that is close to the heart of many purveyors of Italian cuisine. Together with the béchamel, my lasagna came with a wonderful creamy flavor. It also brimmed with rich and tasty tomato sauce. Don’t judge me but let’s just say the dishwasher didn’t have a difficult time cleaning my plate that night.

The Merluzzo in Crosta di Patate ($35) was hands down my favorite dish during my dinner. The cod fish was oh-so-slippery and tender, a sign of freshness. The potato crust lining the exterior gave the fish a bit of a crunch that contrasted nicely with the meat within. While side dishes are usually left as an afterthought, the baby spinach underneath the meat needs to be mentioned. I just loved how flavorful it was!

A signature item in the new menu is the Pizza Burrata ($25). The pizza may look deceivingly simple but the dough is actually painstakingly prepared by Chef Aldo 48 hours prior to serving in the restaurant’s brick oven. The result is a crust that is light and crispy. With nothing but some chunks of tomatoes, tomato sauce, a hint of basil and of course, burrata cheese; the pizza was a delight with the rich and buttery burrata being the highlight.

The Morbido al Ciccolato ($16) or wam chocolate lava cake is another item on the new menu that you should not miss. One of my favorite desserts, I have practically tasted dozens of lava cakes in my lifetime but the one at Pete’s Place was memorable for not being overly sweet. The moist and warm chocolate oozed out immediately as I carved my first slice and it was just pure ecstasy from there. To fully enjoy this dessert, make sure to combine the chocolate with the vanilla ice cream for a nice hot and cold balance. Just thinking about it now makes me want to have a go at it again.
