The former 15 Stamford by Alvin Leung has been “rebranded” as 15 Stamford with the departure of the demon chef Alvin Leung from Capitol Kempinski Singapore’s flagship restaurant.
With this rebrand comes the unveiling of the restaurant’s new proposition, Where The Land Meets The Sea. This is a new menu comprising the best of both worlds – where hearty steaks intertwine with fish and other seafood courses. The new menu is also markedly more western, in contrast to the Asian influence of the menu back when the restaurant was under Alvin Leung.
The kitchen is now helmed by Executive Sous Chef Jay Siaw, with he and his team offering over 50 dishes in this new menu. I recently visited the restaurant for dinner to try out the new menu.
I distinctly remember 15 Stamford for their “tangy” starters – I still have fond memories of the Hamachi with Calamansi Ponzu – and the Hiramasa Kingfish (S$24) continues that tradition. The fish here is marinated with green onion puree and yuzu ponzu sauce. The puffed rice cracker toppings provide for a nice contrast to the delicate texture of the raw fish.
For something more substantial, the Pan-Fried Foie Gras (S$32) is a specialty of the house. The foie gras here is more on the sweet side as it’s paired with banana textures and rum & raisins.
I thought the Pan Fried Hokkaido Scallops (S$38) was a bit over-done and the texture was a bit dry.
Transitioning to hearty mains of the land, the Braised Wagyu Beef Cheeks (S$48) was gently cooked in a rich red wine sauce and enveloped by creamy potato mousseline and roasted shallots. The beef was flavorful and delightfully tender.
Another highlight on the menu is the Char-grilled Wood Smoked Quail (S$52). Presented in an exquisite wooden chest for the ultimate wood-smoked aroma, the bird came well-seasoned and juicy. My only gripe about it is that a bird of that size, when presented whole with its small bones, was a bit trickier to eat.
We ended the night with Pandan Soufflé (S$32), accompanied by lemongrass pistachio biscotti and palm sugar ice cream. The Asian influence that 15 Stamford possessed when it first opened in late 2018 has pretty much dissipated with the new menu with this souffle being the last vestige of that. I never thought that pandan in a souffle would work but it worked well and was wonderfully fluffy.
Aside from having dishes available on an ala carte basis, 15 Stamford also has 3-course lunch sets that start from just S$40 and dinner sets that start from S$118 for 4 courses.
